Went overboard with the green curry paste tonight  .. potato & eggplant curry with chicken curry. I had to lower the 'hotness' with lots of mint and coconut cream ;D ;D |

we all had something different - mostly left overs from the freezer. Hubby took along a bowl of spaghetti to work. Son had a mashed potato/veg sort of thing. I had quiche and my daughter made a quick French loaf with melted cheese before she went off to work.
Love those easy days. I usually freeze whatever I make too much of, so we can cover days like this without too much fuss.
